Crunchy, salty, sweet, and spicy: my family has been enjoying this Ginger and Dark Trail Mix recipe for a few months now. This recipe is loaded with nuts, dried fruit, semi-sweet chocolate, and crystallized ginger. Yum!
This recipe is easy to throw together, and it makes a tasty snack or addition to plain yogurt and/or granola.
Ginger and Dark Chocolate Trail Mix
1 cup of crispy cashews or roasted, salted cashews
3/4 cup of crispy pecans or roasted, salted pecans
1 cup of crystallized ginger, diced
1/2 cup of semi-sweet mini chocolate chips (I use Enjoy Life soy-free chocolate chips and chunks)
1/2 cup of semi-sweet chocolate chunks
1/2 cup of unsulphured organic dried apricots, diced
1/2 cup of dried organic currants (or substitute raisins)
Dice the candied ginger and dried apricots.
Combine all ingredients in a large bowl and fold together.
Enjoy! Store leftovers in an airtight, preferably glass, container.
